All too common on the market are today’s homogenized products, deprived of both taste and appearance. Bettella’s Prosciutto Cotto from Maiale Tranquillo® recounts a completely different story and another philosophy. No effort has been sacrificed in preserving the quality of our pigs, raised in the open air for 22-24 months, nor their prized hind legs; attention is lavished on this ham-to-be. Herbs and spices are boiled together, added to a natural brine and injected into the ham.
