From raw material to territory
Speck means Alto Adige: much of this region is alpine, halfway between north and south, a crossroads between Nordic and Mediterranean traditions. In an agreeable microclimate which bestows pure air and sun on the land, peasant wisdom has made an art of the necessity of preserving meat for survival. Smoking techniques from cold Teutonic lands are combined with outdoor drying, a southern technique that takes advantage of the fresh dry breezes of the Prealps. Bettella adds the Maiale Tranquillo® to the charm of this territory, where it produces its own Speck.
