Fiocco di Prosciutto Crudo, a select cut and the finest part of the animal, follows a time-honoured, almost ancestral method of preparation. Only the best Maiali Tranquilli®, raised for 22-24 months and weighing over 300 kg are chosen for this product. The animal’s extra weight boosts the size of the culatello. The result is more than simple prosciutto. It is a sapient mingling of flavour and aroma in a dense, yet delicate balance which is then left to rest quietly for 12 full months.
