Famous as an idyllic vacation spot, Alto Adige also has deeply-rooted farming traditions that continue today in the making of artisan char- cuterie. The traditional process of smoking was chanced upon as winter pork hung to dry in farmhouses next to the heat of the fire absorbing the faint scent of woodsmoke.
