Fat and flavours that only the masadur, (artisan craftsman) and his specialised knowledge can mix to create a harmonious balance. Under salt for two weeks and briefly smoked for about an hour, Cotto di Gioia is then doused in a light brine give this pancetta its very own character and unexpected joy
