The brawn of fat
As we all know, pork is merely a metaphor for fat. Historically, pork fat has always been at the heart of gastronomy, in contrast to the modern prejudice against all things lard. Our generation’s short memory has forgotten that this much-maligned layer beneath the skin is an ideal means of preservation, eminently capable of pro- tecting the delicate contents from external aggression. Today the Maiale Tranquillo® counters this prejudice and celebrates the gastronomical joy that is Lardo.
