Plus-sized “all muscle”

Neither salame or ham, but perhaps akin to coppa, Lombo Stagionato conserves prized loin in casings rather than by the usual cooking. Lean and succulent pork loin produced from Bettella’s Maiale Tranquillo® is the source for this artisan charcuterie. The 300 kg weight reached via slow grazing over 22-24 months produces a consequently bigger loin, hence the product name.
